This well-used chef’s knife had become one of Chef Ben Sullivan’s favorite tools, but a broken tip threatened to end its working life. Rather than simply grinding the blade shorter, I carefully restored the original profile, maintained the knife’s balance, thinned the blade where needed, and re-established the edge geometry.Today, it’s back where it belongs—in the kitchen, preparing meals every day.
